Beta-carotene, vegetables, and skin cancer

High intakes of [beta]-carotene and vitamin C, and of the
fruits and vegetables that contain them, have been linked
with reduced risks of many types of cancer. While the evidence
is particularly strong for epithelial cancers such as lung
cancer and oral cancer, there have been no reports on the
relationships of these foods and nutrients to one very common
epithelial cancer--non-melanoma cancer of the skin. The
report described here, from the University of Melbourne,
Australia, describes a preliminary study of diet and skin
cancer.
A total of 88 consecutive male patients with non-melanocytic
skin cancer and 88 control men admitted to the same veterans'
hospital for elective surgical procedures were interviewed.
Dietary data were collected using a food frequency questionnaire
that covered a limited variety of foods and food groups.
Subjects were also asked about smoking habits and consumption
of alcohol.
High intakes of fish; beans, lentils or peas; carrots, silverbeet
(Swiss chard), or pumpkin; cabbage, Brussels sprouts or
broccoli; and foods containing [beta]-carotene or vitamin
C had significant protective effects against skin cancer.
Cases had lower serum levels of [beta]-carotene and vitamin
A than controls. Smoking and alcohol consumption showed
no statistically significant association with skin cancer
risk.
"This preliminary study points to the need for further
research into the etiologic relevance of previous diet,
especially the consumption of vegetables containing [beta]-carotene
and vitamin C and of cruciferous vegetables, as well as
the consumption of fish, in nonmelanocytic skin cancer."
